Ingredients

  • 500g Kush Organic Rope Mussels.
  • ½ a jar pepper relish.
  • Extra Virgin olive oil.

Method

  1. Place your pre-cooked mussels into a saucepan. Strain off any excess water.
  2. Add a couple of glugs of Extra Virgin olive oil.
  3. Cover pan and heat gently for 5 minutes shaking the pan from time to time until mussels are hot and open.
  4. If some mussels remain closed heat for a further 3 mins. and then discard any mussels still closed.
  5. Drain off any excess juice.
  6. Add ½ a jar of pepper relish per 500g of mussels.
  7. Reheat the pan until the relish and the mussels are hot. Serve immediately.

Ingredients

  • 500g of Kush Organic Mussels.
  • ½ a clove of garlic, finely chopped.
  • 1 stick of lemon grass (finely sliced, no leaves)
  • 1 fresh chilli red/ green/ both, (chopped, no seeds)
  • 1 tsp finely grated ginger
  • 1 tsp of sesame oil
  • 1 handful of fresh coriander, (finely chopped)
  • sprinkle of salt & freshly ground black pepper
  • 2 spring onions, chopped.
  • 1 lime - freshly squeezed juice of
  • 100ml of coconut milk
  • 1 tbsp of Extra Virgin olive oil.

Method

  1. Place your pre-cooked mussels into a saucepan. Strain off any excess water.
  2. Add a couple of glugs of Extra Virgin olive oil.
  3. Add the rest of the ingredients, apart from the lime juice and coconut milk.
  4. Cover pan and heat gently for 5 mins. shaking the pan from time to time until mussels are hot and open.
  5. If some mussels remain closed heat for a further 3 mins. and then discard any mussels still closed.
  6. Squeeze in your lime juice and add your coconut milk. Bring to the boil and serve immediately.

Ingredients

  • Kush Organic Rope Mussels (allow 500g per person as a main course)
  • Organic extra virgin olive oil
  • 2 cloves of organic garlic, finely chopped
  • Shallots, finely chopped
  • Handful of organic parsley
  • Glass of dry white organic wine

Method

  1. In a saucepan, gently sweat the garlic and shallots in the olive oil. Do not brown.
  2. Add the wine, boil it for a minute and then empty the Kush Organic Rope Mussels into it.
  3. Replace the lid and cook, giving a shake from time to time.
  4. The mussels are ready when they have opened. Discard any unopened mussels.
  5. Spoon the mussels into a serving bowl.
  6. Add the parsley to the pan, give it a stir and pour over the mussels.
